CHASING Marilu

A Little Taste of Akron, OH

Richfield, near Akron, OH, will play host to romance readers and the authors they love when Romanticon 2009 hits town in October. If you are going, you might want to check out the Hower House at the University of Akron. Built in 1870, it is purported to be haunted by a female spirit. She seems to not like men so much because they have reported the most eerie experiences. I like to think she just wants them to wipe their muddy boots off.

 
JOIE'S JAMBALAYA

Joie Landry is the heroine from Changing Hearts. Here is her crowd-pleasin' Jambalaya.

(This recipe makes a BIG pot of Jambalaya, but if you're feeding a hungry crowd of shifters, I 'spect you'd better add a bit more of everything. It might look complicated, but I promise it's not!!)

    Ingredients:
  • 1 T olive oil
  • 1 C skinless, boneless chicken breast halves - chopped into bite sized pieces
  • 1/2 LB pork sausage links, thinly sliced
  • 1 C olive oil
  • 1 C all-purpose flour
  • 2 T minced garlic
  • 3 Quarts chicken broth
  • 1 (12 oz) Bottle of beer (I use dark beer cause that's what Malcolm likes to drink--he says the dark beer gives it a "thicker" taste)
  • 3 stalks celery, diced
  • 4 Roma tomatoes (plum) diced
  • 1 sweet onion sliced
  • 1 (10 oz) can tomatoes with green chili peppers, with liquid
  • 2 T chopped fresh red chili peppers
  • 1 bunch fresh parsley, chopped
  • 1/4 C Cajun Seasoning (we use Tony Chachere's, but honey, you use whatever you want)
  • 1 LB shrimp, peeled, & de-veined
DIRECTIONS:

Carefully pour the chicken broth and beer into the roux, stirring constantly. There will be a lot of steam and hissing, but keep stirring. Bring this to a boil and then add your chopped veggies. Reduce the heat, cover, and let sit for about 40 minutes. Stir it every now and then. For the final step, add the chicken and sausage and (if you want it) the shrimp. It's very important that you don't add the shrimp any earlier or they'll get too tough to eat. Simmer for about 20 minutes and serve with rice. Cornbread makes a nice accompaniment to this as well.
